Chicken Enchiladas step by step
- Bake chicken until done and shred in a bowl.
- While chicken cooks, sauté peppers and onions.
- Combine chicken, rotel, sautéed peppers and onions, some shredded cheese and seasonings to a bowl and mix.
- Heat tortillas in microwave or in skillet until soft.
- Add mixture to tortillas and roll up.
- For the sauce: Blend together as many chipotle’s and sauce as you’d like, sour cream, cream cheese and half the canned enchilada sauce.
- Add the other half of the canned enchilada sauce to the bottom of a baking dish.
- Add the rolled enchiladas and then the blended sauce on top.
- Cover with the rest of the shredded cheese.
- Bake at 375 for 20 mins.
- Add lettuce, crema or sour cream, queso fresco or shredded cheese, diced tomatoes, parsley or guacamole for garnish.
