- Soak the dried glass noodles in hot water for 30 minutes as you prep. If using dried shiitake mushrooms, soak in hot water 15 min before slicing..
- Heat the oil in a large non-stick pan over medium heat. Saute onion, red bell pepper and ginger until softened, a few minutes..
