My lunch…Kerala style menu instructions
- Papaya stir fry : sliced papaya to small sized cubes or pieces..
- Crush shallots and chilli using pastel and mortar.
- In a wok,heat the oil,add mustard seeds,rice and allow to splutter.keep at Low heat.add red chilli and curry leaves,sauté for a minute and add the crush shallots and chilli.mix well.sauté well,till it’s translucent to slight brown.
- Add papaya pieces,turmeric powder and salt and mix well,add 1/4 cup of water,cover and cook on Low heat till papaya is well done.(don’t forget to switch off heat once done..I did forgot henceit got slightly burned…I would like to say,colour changed ;) …hahahaha).
- Serve as side dish for rice.
- Curd gravy,we call it moru kachiyathu,that means boiled buttermilk..in a pan,heat oil on Low flame,add mustard seeds,fenugreek seeds,chilli and curry leaves.when it splutter,add turmeric and salt.I will switch off flame at this point.add the well blended yoghurt.mix well.do not on flame again.Serve as a gravy for rice.it is light on stomach..
